1. Cut the fish into six equal portions, rinse, and pat them dry.
2. In a large nonstick pan, sauté the shallots over medium heat for 3 to 4 minutes, or until translucent. Add a little water to the pan to prevent the shallots from sticking.
3. Lay the fish in the pan in a single layer. Add the wine and capers, and cook for about 2 minutes, until heated through. Add a little extra water, if needed, to cover the fish. Add the tomatoes and parsley, and season to taste with salt and pepper.
4. Cover the pan and poach the fish for 6 to 10 minutes. After 6 minutes, check with a fork, and cook only until tender and opaque. Do not overcook.
